Sweet Heat Lemon or Strawberry Margarita Cheesecake

Serves:4

Ingredients:
1 cup sweet biscuit crumbs
1/3 cup butter, melted
1/3 cup Sweet Heat Margarita and Daiquiri mix
1 x 85g packet lemon or strawberry jelly crystals
1/3 cup Tequila
500g cream cheese, cut into cubes
1 cup light sour cream
2 cups strawberries, sliced or mixed berries

Instructions:

  1. Mix biscuit crumbs and butter and press into the base of 22cm springform pan. Chilli in freezer.

  2. Heat Sweet Heat Margarita and Daiquiri mix in a glass bowl for 30 seconds in microwave. Add jelly crystals and mix well. Allow mixture to cool slightly.

  3. Add Tequila cream cheese and sour cream to mixture. Beat with electric beater until well combined and a smooth mixture is formed.

  4. Pour mixture onto chilled crumb base. Refrigerate for 60 minutes, top with strawberries and chill in the refrigerator overnight. Enjoy!
